Baby Red Potatoes

40 baby red potatoes
1 bunch fresh parsley
4 cloves garlic
1/2 c. butter
salt and pepper

Peel a band of peeling around center of potatoes. Put in pan of cool water. Boil until soft and drain. Pour melted butter over top. Add minced garlic and finely chopped parsley leaves. Sprinkle salt and pepper. Roast in 350 oven (in roasting pan( for 15 min. until lightly browned. Garnish with fresh parsley.
