Bacon Quiche

9 inch pastry shell
1/2 lb sliced bacon
1 c. shredded Swiss cheese
3 eggs
1/4 c. minced onion
2 c. half and half
1/4 t. pepper
1/4 t. sugar (optional)
dash cayenne pepper
small amount chopped ham

Bake the 9 inch pastry shell for 5 min at 350. Remove from oven. Fry bacon and onions together, drain and crumble or cut into pastry shell. Sprinkle cheese over top. Beat eggs slightly and add cream and seasonings. Pour egg mixture over cheese. Ham can be added if desired. Some times I just cut a little Budding ham over top. Bake pie at 300 for about 40 min. Shake pie slightly to see if center is too jiggly or insert a knife to see if it comes out clean. Do not over bake. Let it set for about 5 min. before cutting.
